Nature's candy dates create a sweet, buttery, and nutty base for easy-to-make oat and walnut bars.
Ingredients:
  • 8 ounces dates, chopped
  • 0.5 cup water
  • 1.5 teaspoons vanilla extract
  • 1.5 cups rolled oats
  • 1 cup firmly packed brown sugar
  • 0.5 cup chopped walnuts
  • 0.75 teaspoon salt
  • 0.75 teaspoon baking soda
  • 0.75 cup butter, melted
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • In a saucepan over medium heat, bring dates and water to a boil. Simmer and stir until thickened, about 3 to 4 minutes. Remove from heat and stir in vanilla extract.
  • In a large bowl, mix together oats, flour, brown sugar, walnuts, salt, and baking soda. Stir in the melted butter until well combined.
  • Spread 2/3 of the oat mixture in an 8-inch square baking dish, press over the bottom and sides. Top with date mixture, then crumble the rest of the oat mixture evenly on top, pressing down gently.
  • Bake until golden for approximately 25 minutes in the preheated oven.
