Grandma's easy Danish aebleskevers: Sweet pancake treats perfect for dipping in powdered sugar.
Ingredients:
  • 2 large eggs, separated
  • 0.75 cup all-purpose flour
  • 1 tablespoon white sugar
  • 0.5 teaspoon baking powder
  • 0.75 cup sweetened condensed milk
  • 1 tablespoon shortening
  • 0.25 cup unsalted butter, melted, or as needed
Instructions:
  • Whisk egg whites in a bowl until peaks form.
  • Combine the flour, sugar, baking powder, and salt in another bowl. Add egg yolks, condensed milk, and shortening, then gently fold in the egg whites.
  • Preheat the aebleskiver pan over medium heat until sizzling. Brush each cup with a touch of melted butter using a pastry brush, then fill each with roughly 2 tablespoons of batter until nearly reaching the top. Cook until bubbles start to form; carefully flip over to let the batter fill the cups. Cook further, turning until beautifully golden. Repeat with the rest of the batter.
