Ingredients:
  • 3 cups sugar
  • 1 cup margarine, softened
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking soda
  • 0.25 teaspoon salt
  • 6 very ripe bananas, mashed
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C) and lightly grease a 9x13 inch baking pan.
  • In a spacious bowl, blend the sugar and margarine until fluffy. Add the eggs one at a time, beating thoroughly after each addition, then mix in the vanilla extract.
  • Sift flour, baking soda, and salt in a large bowl. Alternate blending this mixture into the egg mixture with buttermilk until just combined. Gently fold in mashed bananas, mixing until evenly combined. Pour batter into prepared pan.
  • Bake in the preheated oven for approximately 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
