Savory ground beef casserole with olives, pimentos, and Cheddar cheese over egg noodles.
Ingredients:
  • 1 (12 ounce) package egg noodles
  • 1 green bell pepper, chopped
  • 1 large onion, chopped
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 1 pinch salt and ground black pepper to taste
  • 1.25 cups grated Cheddar cheese, divided
  • 1 (6 ounce) can chopped olives
  • 1 (4 ounce) jar chopped pimento peppers
Instructions:
  • Heat your oven to 325°F (165°C).
  • Fill a large pot with lightly salted water and bring it to a rapid boil. Cook the egg noodles until they are tender yet firm to the bite, for about 7 to 9 minutes.
  • Heat a large skillet over medium-high heat. Brown and crumble ground beef with bell pepper and onion for 5 to 7 minutes. Mix in flour, slowly add milk while whisking, season with salt and pepper. Fold in 1 cup Cheddar cheese, olives, and pimentos.
  • Drain the noodles and combine them with the beef mixture. Spoon the mixture into a casserole dish and generously sprinkle the remaining cheese on top.
  • Bake in the preheated oven for about 40 minutes, until the dish is bubbly and the cheese is melted and golden brown.
