Spiced zucchini bread with dates for a delicious twist on Grandma's classic recipe.
Ingredients:
  • 3 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 pinch ground nutmeg
  • 1 pinch ground ginger
  • 1 pinch ground black pepper
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 3 eggs, beaten
  • 2 teaspoons vanilla extract
  • 2 cups shredded zucchini
  • 0.5 cup dates, pitted and chopped
Instructions:
  • Begin by preheating your oven to a toasty 300 degrees F (150 degrees C) while ensuring two 9x5-inch loaf pans are generously greased and floured.
  • Combine flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and pepper in a bowl and whisk until well mixed; set aside.
  • Mix sugar, oil, eggs, and vanilla until smooth. Gently combine with flour mixture, zucchini, and dates until well incorporated. Pour batter into loaf pans.
  • Bake in the preheated oven for about 70 minutes until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
