Generations-old grandma's buttermilk pancake recipe for crowd-pleasing breakfasts.
Ingredients:
  • 3 cups all-purpose flour
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 cups buttermilk, or more as needed
  • 0.5 cup vegetable oil
  • 2 large eggs
Instructions:
  • Preheat the griddle to 400°F (200°C) following the manufacturer's guidelines.
  • In a mixing bowl, thoroughly combine flour, sugar, salt, and baking soda. Mix in 3 cups of buttermilk, vegetable oil, and eggs by hand until just combined. Adjust consistency with more buttermilk if necessary. Aim for a slightly lumpy batter to ensure fluffy pancakes. Overmixing will result in flat pancakes.
  • Spoon batter onto the hot griddle in batches. Cook until bubbles form on the top surface and start to pop, for about 3 to 4 minutes. Flip and cook until the other side turns golden brown, around 2 minutes.
