Decadent caramel cashew candies: simple to make, impossible to resist.
Ingredients:
  • 1 (9.25 ounce) container cashews, chopped
  • 1 cup light brown sugar
  • 1 cup golden syrup (such as Roger's®)
  • 1 (14 ounce) can sweetened condensed milk
Instructions:
  • Spritz a 9x13 inch baking dish with butter-flavored cooking spray, then lay out the chopped cashews on the bottom.
  • In a large, heavy-bottomed saucepan, mix brown sugar, golden syrup, sweetened condensed milk, and butter. Let it boil over medium-high heat without stirring. Continue heating until it reaches 250 degrees F (120 degrees C) or until a small amount dropped into cold water forms a firm ball.
  • Drizzle the caramel over the cashews and mix thoroughly. Evenly spread the mixture in the dish using a heatproof rubber spatula. Let it cool for 1 hour before cutting into squares or rolling into balls according to your preference.
