Ingredients:
  • 0.25 cup unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 1 cup brown sugar
  • 4 pounds sweet potatoes, peeled and sliced
  • 2 tablespoons cornstarch
Instructions:
  • In a bowl, mix together butter, vanilla extract, and salt. In a separate bowl, combine brown sugar and white sugar.
  • Arrange a delightful blend of potatoes and sugar in the base of a slow cooker, then generously drizzle the luscious butter mixture on top.
  • Slowly cook until tender over 6 hours under cover.
  • Transfer a portion of the cooking liquid from the slow cooker to a saucepan, then add cornstarch and whisk until combined. Bring the mixture to a boil and stir until thickened, around 5 minutes. Drizzle over the potatoes before serving.
