Cheesy potato casserole: Grandma's comforting recipe with creamy mozzarella and Cheddar cheese sauce, ready in an hour.
Ingredients:
  • cooking spray
  • 1 pound medium yellow-flesh potatoes, scrubbed and chopped into 1-inch cubes
  • 1 pound red potatoes, scrubbed and chopped into 1-inch cubes
  • 1 cup shredded mozzarella cheese
  • 0.5 cup shredded Cheddar cheese
  • 0.5 cup sour cream
  • 0.5 cup mayonnaise
  • 4 tablespoons salted butter, cut into small pieces
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a deep 9x13-inch baking dish with cooking spray.
  • In a large pot, submerge yellow and red potatoes in salted water and bring to a boil. Simmer until tender, approximately 10 minutes. Drain the potatoes.
  • In a large bowl, blend mozzarella cheese, Cheddar cheese, sour cream, and mayonnaise until smooth. Gently fold in the potatoes, using a wooden spoon or spatula to prevent mashing.
  • Transfer the potatoes into the baking dish. Sprinkle butter on top and cover with foil.
  • Bake in the preheated oven for 25-30 minutes until golden. Switch to broil mode, uncover the dish, and broil until the top is browned, around 5 minutes.
