Easy yet impressive Parmesan-crusted chicken that will leave your guests wowed by your culinary skills!
Ingredients:
  • 8 skinless, boneless chicken breast halves
  • salt and pepper to taste
  • 2 teaspoons garlic powder, divided
  • 1 cup bread crumbs
  • 0.5 cup grated Parmesan cheese
  • 1 pound sliced fresh mushrooms
  • 0.25 cup butter, melted
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon chopped fresh parsley
Instructions:
  • Heat your oven to 375°F (190°C).
  • Whisk the egg with salt, pepper, and 1 teaspoon garlic powder in a shallow bowl. In another dish, combine bread crumbs, 1 teaspoon garlic powder, and Parmesan cheese. Set aside.
  • Combine the melted butter and lemon juice, then pour most of the mixture into a 9x13 inch baking dish, tilting to coat. Spread mushrooms evenly on the bottom. Dip chicken breasts in egg and breadcrumbs, then place on top of the mushrooms. Drizzle the rest of the butter on the chicken and sprinkle with parsley.
  • Roast in the preheated oven for 45 minutes until the chicken is beautifully golden and the juices run clear.
