Ingredients:
  • 2.25 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.33333334326744 cup orange juice
  • 1 cup buttermilk
  • 2 tablespoons cranberry-flavored liqueur
  • 0.75 cup vegetable oil
  • 1 cup chopped dates
  • 1 cup fresh cranberries
  • 2 tablespoons grated orange zest
  • 0.75 cup white sugar
Instructions:
  • Preheat your oven to 350°F (175°C). Grease and flour a 10-inch tube pan. Combine flour, baking soda, baking powder, and salt by sifting them together; then set aside.
  • Combine 1 cup of white sugar, 1/3 cup of orange juice, eggs, buttermilk, cranberry liqueur, and vegetable oil in a large bowl. Use an electric mixer to blend well. Gently stir in the dry ingredients until just moistened. Fold in chopped dates, cranberries, and orange zest. Spread the batter evenly in the pan.
  • Bake in the preheated oven for 1 hour, or until a knife inserted into the center of the cake comes out clean. Allow the cake to cool in the pan on a wire rack for 15-20 minutes.
  • Transfer the cake onto a serving plate. Combine 1 cup of orange juice and 3/4 cup of white sugar in a small saucepan. Bring to a boil, making sure the sugar dissolves completely. Drizzle the sauce over the cake using a turkey baster or spoon. Poke the cake with a fork or skewer to enhance absorption of the sauce until the cake is fully moistened.
