Grandma's Cranberry-Orange Gelatin Salad

Thanksgiving Cranberry-Pineapple Salad upgraded with orange zest and pecans for a modern twist.
Ingredients:
  • 1 (6 ounce) package raspberry flavored Jell-O® mix
  • 2 cups boiling water
  • 1 (16 ounce) can whole berry cranberry sauce
  • 1 (8 ounce) can crushed pineapple, undrained
  • 1 cup chopped celery
  • 1 cup chopped pecans
  • 1 teaspoon orange zest
  • 1 (4 ounce) package cream cheese, softened
  • 0.5 cup whipped topping
Instructions:
  • In a bowl, dissolve the gelatin in boiling water. Mix in cranberry sauce, pineapple, celery, pecans, and orange zest until well combined. Transfer the mixture to a mold or serving dish.
  • Refrigerate for 8 hours or overnight to enhance flavor and texture.
  • In a mixing bowl, combine cream cheese with half of the whipped topping and gently fold in the rest until fully incorporated.
  • Carefully release the gelatin from the mold, then generously layer on the delicious topping mixture.
