Whip up a quick and delicious batch of Grandma's-style peanut butter fudge with Chef John's easy recipe.
Ingredients:
  • 1 pound powdered sugar
  • 1.25 cups unsalted butter
  • 1.5 cups creamy peanut butter
  • 0.5 teaspoon kosher salt
  • 1.5 teaspoons vanilla extract
Instructions:
  • Pass the sugar through a fine-mesh strainer into a large bowl.
  • In a saucepan over medium heat, gently melt butter and peanut butter together until bubbles form on the edges, approximately 3 to 5 minutes. Add salt and vanilla extract. Pour this mixture over powdered sugar in a bowl and stir until smooth using a spatula.
  • Spread mixture into an 8x8-inch baking pan lined with plastic wrap. Cover completely and chill until firm yet easy to slice, 1 to 3 hours.
  • Unwrap the fudge and cut it into small cubes. Allow it to come to room temperature on the counter if necessary.
