Homemade date-nut bread - a festive loaf bursting with prunes, dates, and nuts.
Ingredients:
  • 0.5 cup raisins
  • 1.5 cups boiling water
  • 2 teaspoons butter, or as needed
  • 1 teaspoon baking soda
  • 1 cup chopped pitted dates
  • 7 pitted prunes, chopped
  • 0.25 cup unsalted butter, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 egg, well-beaten
  • 1.75 cups all-purpose flour
Instructions:
  • Place the raisins in a bowl and cover them with boiling water, let them soak for about 20 minutes until the water is infused with the flavors. Drain the raisins, keeping the flavored water. Remove and discard the raisins.
  • Preheat the oven to 350°F (175°C) and generously butter a loaf pan.
  • In a small saucepan, bring reserved water to a boil. Transfer 3/4 cup boiling water to a bowl and stir in baking soda.
  • Combine dates and prunes in a large bowl. Pour baking soda water over the fruits and mix in unsalted butter until melted. Stir in sugar and vanilla extract, then allow the mixture to cool to room temperature.
  • Combine the egg with the fruit mixture, ensuring everything is coated evenly. In a separate small bowl, mix the flour and salt before adding them to the fruit mixture and stirring to combine. Gently fold in the walnuts and transfer the mixture to the prepared loaf pan.
  • Bake in the oven until a toothpick inserted in the center comes out clean, for 50 to 65 minutes. Let it cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
