Fluffy egg whites elevate classic vanilla pudding in this timeless recipe.
Ingredients:
  • 0.25 cup all-purpose flour
  • 2 tablespoons white sugar
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 egg whites
Instructions:
  • Combine flour and 2 tablespoons of white sugar in a small bowl, whisk until combined, and set aside. In a small saucepan, whisk together egg yolks, milk, and 1 teaspoon of vanilla extract until smooth. Place the saucepan over medium-high heat, stirring constantly. Once the mixture is warm, whisk in the flour mixture and cook until the sauce thickens for about 5 minutes. Stir continuously to prevent scorching. Keep warm over low heat once thickened.
  • Whisk egg whites in a large glass or metal mixing bowl until foamy. Gradually add 2 tablespoons sugar, beating until stiff peaks form. Peak should hold its shape when beater is lifted. Stir in 1 teaspoon vanilla extract.
  • Gently fold the hot sauce into the egg whites using a rubber scraper until well incorporated. Be careful not to overmix to avoid deflating the egg whites. Serve warm.
