Crunchy homemade granola with oats, nuts, and coconut baked to golden perfection - perfect for breakfast or snacking.
Ingredients:
  • 2 teaspoons ground cinnamon
  • nonstick cooking spray
  • 4 cups old-fashioned oats
  • 1.5 cups chopped pecans
  • 1.5 cups slivered almonds
  • 1 cup coconut flakes
  • 0.5 cup vegetable oil
  • 0.33333334326744 cup packed brown sugar
  • 0.33333334326744 cup honey
  • 0.25 cup maple syrup
  • 2 teaspoons vanilla extract
  • 0.75 teaspoon salt
  • 2 cups dried cranberries
Instructions:
  • Preheat the oven to 325°F (165°C) and line a baking sheet with aluminum foil, then coat it with nonstick cooking spray.
  • Combine oats, pecans, almonds, and coconut in a large bowl and let rest.
  • In a saucepan over medium heat, mix oil, brown sugar, honey, maple syrup, cinnamon, vanilla, and salt until it boils. Remove from heat and pour over the oats, mixing until coated. Spread the granola on a baking sheet.
  • Preheat the oven and bake for 20 minutes. Stir and bake on the top rack until golden, about 5 minutes more. Remove from the oven and cool for 20 to 30 minutes before serving.
  • Mix the chilled granola with plump cranberries, then keep it in a sealed container to maintain freshness.
