No-bake grandma's lemon cream pie: rich, decadent summer treat.
Ingredients:
  • 6 tablespoons cornstarch
  • 1 cup milk
  • 6 large egg yolks, lightly beaten
  • 0.25 cup salted butter
  • 2 tablespoons grated lemon zest
  • 0.5 cup fresh lemon juice
  • 1 cup heavy whipping cream
  • 0.5 cup sour cream
  • 1 (9 inch) baked pie shell
Instructions:
  • In a saucepan, mix sugar and cornstarch together. Gradually stir in milk until the mixture is smooth. Cook over medium heat, stirring continuously until thickened and bubbly, approximately 10 minutes. Reduce the heat and cook for an additional 2 minutes. Remove from heat.
  • Temper the egg yolks by mixing a small ladle of the hot filling in; then pour it all back into the pan. Let it gently boil and cook while stirring for 2 minutes. Take it off the heat and mix in the butter and lemon zest. Lastly, gently stir in the lemon juice and let it cool to room temperature for about 30 minutes.
  • Whip cream in a chilled glass or metal bowl using an electric mixer until soft peaks form.
  • Combine the fluffy whipped cream and tangy sour cream with the zesty lemon filling, then gently transfer the mixture into the pastry shell. Refrigerate for a minimum of 2 hours before indulging in the deliciousness.
