Grandma's creamy mashed potato casserole, topped with cheese, is a comforting side dish that pairs perfectly with any meal, ideal for holidays or everyday dinners.
Ingredients:
  • 5 pounds potatoes, peeled and cut into chunks
  • 1 (8 ounce) container sour cream
  • 1 (8 ounce) package cream cheese, softened
  • 0.25 cup margarine
  • 1 tablespoon milk
  • 1 tablespoon garlic powder, or more to taste
  • 2.5 teaspoons salt
  • 0.25 teaspoon ground black pepper
  • 0.5 cup shredded Colby-Jack cheese, or more to taste
Instructions:
  • In a large pot, boil potatoes in salted water until tender, about 15-20 minutes. Drain before using.
  • Transfer the potatoes back to the pot and mash until silky. Incorporate sour cream, cream cheese, margarine, and milk; whip until airy. Mix in garlic powder, salt, and pepper. Spoon into a 9x13-inch casserole dish.
  • Bake in the preheated oven for 30-40 minutes until heated through. Sprinkle Colby-Jack cheese over the top and bake for an additional 5 minutes until cheese is melted.
