Vanilla almond cookies with a perfect balance of sweetness.
Ingredients:
  • 1 1/3 cups sugar
  • 1/2 cup shortening
  • 1/2 cup butter, softened
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon almond extract
  • 1 egg
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
Instructions:
  • Preheat oven to 350°F. In a large bowl, cream together 1 cup sugar, shortening, and butter until light and fluffy. Mix in vanilla, almond extract, and egg until well blended. Stir in flour, baking soda, and cream of tartar until fully combined.
  • Roll the dough into 1-inch balls, coat them in the remaining 1/3 cup of sugar, and then place them 2 inches apart on ungreased cookie sheets. Use the bottom of a sugar-dipped glass to flatten the balls to 1/8-inch thickness.
  • Bake at 350°F until edges are lightly golden brown, for about 7 to 12 minutes. Let cool for 1 minute before removing from cookie sheets.
