Succulent potato stuffing with mashed potatoes, bread cubes, onion, and celery; ideal for turkey stuffing or loaf pan baking.
Ingredients:
  • 3 potatoes, peeled and cubed
  • 0.5 cup butter
  • 2 celery stalks, finely chopped
  • 1 large onion, minced
  • 2 tablespoons dried summer savory
  • 2 eggs, beaten
  • 6 slices bread, cut into cubes
Instructions:
  • In a large pot, add potatoes and cover them with salted water. Boil over high heat, then simmer covered on medium-low heat until tender, around 20 minutes. Drain, let steam dry for a minute or two, and mash.
  • In a skillet over medium heat, melt the butter. Saute the celery and onion in the melted butter until the onion is translucent, about 5 to 7 minutes. Stir the cooked vegetables into the mashed potatoes along with the savory. Let the mixture cool until just warm.
  • In a large bowl, combine the cooled mashed potatoes with the beaten egg. Gently fold in cubed bread and season with salt and pepper to taste. Chill until needed.
