Indulgent noodle kugel with apples, raisins, nuts, and a delicate egg binding.
Ingredients:
  • 1 (8 ounce) package broad egg noodles
  • 2 tablespoons butter
  • 3 eggs, separated
  • 1 cup white sugar
  • 1.5 teaspoons ground cinnamon
  • 2 apples - peeled, cored and chopped
  • 0.25 cup raisins
  • 0.5 cup chopped almonds
Instructions:
  • Preheat your oven to 350°F (175°C) and lightly grease a 2-quart casserole dish.
  • 1. Boil salted water in a large pot. Add egg noodles and cook until al dente, about 5 minutes. Drain and mix with butter in a bowl.
  • Using an electric mixer, whip egg whites in a bowl until stiff peaks form; set aside. In another bowl, whisk egg yolks until smooth, then blend in sugar. Pour this mixture over noodles, and incorporate cinnamon, apples, raisins, and almonds. Carefully fold in whipped egg whites to maintain volume. Transfer kugel mixture into a baking dish.
  • Place the kugel in the preheated oven and bake until golden brown with a set center, approximately 30 minutes.
