Create irresistible pecan tassies for your Christmas tradition with this easy recipe!
Ingredients:
  • 1 cup butter, softened
  • 6 ounces cream cheese, softened
  • 2 cups all-purpose flour
  • 1.5 cups firmly packed brown sugar
  • 2 large eggs
  • 2 tablespoons butter, melted
  • 1 tablespoon vanilla extract
  • 0.125 teaspoon salt
  • 1.5 cups chopped pecans
Instructions:
  • In a large bowl, use an electric mixer to cream together 1 cup of butter and cream cheese until smooth. Gradually mix in the flour at low speed. Roll the mixture into 48 small balls and place them on a baking sheet. Chill in the refrigerator for 1 hour, covered.
  • Preheat your oven to 350 degrees F (175 degrees C) while lightly greasing 2 mini-muffin pans. Press dough balls into each cup of the mini muffin tins to create pastry shells.
  • Combine brown sugar, eggs, melted butter, vanilla extract, and salt in a bowl and whisk until smooth. Mix in 1 1/4 cups pecans. Fill tart shells 2/3 full with the mixture and sprinkle the remaining pecans on top.
  • Bake until edges are golden brown, about 12-15 minutes in the preheated oven.
  • Cool the cake in the pans on wire racks for 10 minutes. Then gently remove from pans and allow to cool completely on wire racks for about 20 minutes.
