Grandma's Pineapple Upside-Down Cake

Whip up a delicious pineapple upside-down cake in no time with pecans for a simple crowd-pleaser.
Ingredients:
  • 0.33333334326744 cup butter
  • 0.5 cup brown sugar, packed
  • 8 pineapple rings
  • 8 pecan halves
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.66666668653488 cup white sugar
  • 0.25 cup pineapple juice
Instructions:
  • Preheat the oven to 350°F (175°C).
  • In a 9-inch cast iron skillet over medium heat, melt butter until bubbly, then stir in brown sugar. Remove from heat and arrange pineapple rings and pecans on top.
  • Sift together flour, baking powder, and salt in a bowl three times.
  • Using an electric mixer, whip together white sugar and eggs until they are light and fluffy in a bowl.
  • Gradually fold flour mixture and pineapple juice into egg mixture in 3 parts, starting and finishing with flour mixture. Pour the mixture over the pineapple slices.
  • Bake in the preheated oven for 30 to 35 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in the skillet for 5 minutes before carefully inverting onto a serving platter.
