Sweet Croatian nut bread roll with walnut filling.
Ingredients:
  • 0.25 cup warm water
  • 1 (.25 ounce) package active dry yeast
  • 0.75 cup lukewarm milk
  • 0.25 cup white sugar
  • 0.25 cup vegetable shortening (such as Crisco®)
  • 1 egg, beaten
  • 1 teaspoon salt
  • 3.5 cups all-purpose flour, or more as needed
  • 0.5 cup brown sugar
  • 0.25 cup butter, softened
  • 1 egg
  • 0.25 cup milk
  • 0.5 teaspoon vanilla extract
  • 0.5 teaspoon lemon extract
  • 2 cups finely chopped walnuts
Instructions:
  • Create bread dough: Mix together warm water and yeast in a large bowl. Allow it to sit until the yeast softens and a creamy foam forms, approximately 5 minutes.
  • Combine lukewarm milk, white sugar, shortening, egg, and salt with yeast mixture. Blend in flour until a soft and manageable dough is achieved.
  • Transfer the dough onto a lightly floured surface and allow it to rest for 10 minutes. Knead the dough until it becomes smooth and elastic, approximately 8 minutes. Shape the dough into a ball.
  • Transfer the dough to a generously oiled bowl, ensuring it is coated evenly. Cover the bowl with a damp towel and allow it to rise in a warm spot until it doubles in volume or a hole remains when pressed, which should take around 2 hours.
  • Gently deflate dough and transfer to a lightly floured surface. Form into a smooth ball and allow to rest for 15 minutes.
  • Prepare filling by combining brown sugar, butter, and egg in a bowl, beating until creamy. Mix in milk, vanilla extract, and lemon extract until smooth. Fold in walnuts until evenly distributed.
  • Roll out the dough into a generous 20x30-inch rectangle on a floured cloth. Evenly spread the walnut filling over the dough, ensuring it reaches the edges. Roll the dough up along the long edge, similar to a jelly roll, then pinch the edges to seal. Shape the roll into a beautiful snail coil.
  • Prepare the baking sheet by greasing a 9x13x2-inch pan. Then, place the shaped dough on the sheet and allow it to rise for about 1 hour, or until an impression is left when gently pressed.
  • Preheat the oven to a toasty 325°F (165°C).
  • Bake until the top turns a beautiful golden brown, about 40-45 minutes in the preheated oven.
