Easy and delicious skillet pineapple upside down cake served warm with whipped cream or ice cream - a show-stopping dessert.
Ingredients:
  • 1 stick butter
  • 1.5 cups packed brown sugar
  • 1 (20 ounce) can sliced pineapple
  • 1 (4 ounce) jar cherries
  • 1.5 cups all-purpose flour
  • 2.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup butter
  • 2 large eggs
  • 1 cup milk
  • 2 teaspoons vanilla extract
Instructions:
  • Get all your ingredients ready while you preheat the oven to 375°F (190°C).
  • In a cast iron skillet over medium heat, melt 1 stick of butter for about 3 minutes. Once melted, sprinkle brown sugar evenly over the butter. Arrange pineapple slices in a decorative layer with a cherry in the center of each ring. Remove from heat and set aside.
  • Combine flour, baking powder, and salt by sifting them together in a bowl for a smooth and even mixture.
  • In a bowl, combine sugar and 1/2 cup butter until creamy. Then, mix in the eggs.
  • Alternate adding the flour mixture and milk, then mix in the vanilla extract until well combined.
  • Evenly pour the mixture over the pineapples in the skillet.
  • Bake in the preheated oven for about 40 minutes until the cake turns a beautiful golden brown. Allow the cake to cool in the skillet for 10 minutes before gently flipping it onto a serving plate. Enjoy warm.
