Irresistible mini 1-inch cheesecake bites, perfect for entertaining.
Ingredients:
  • 1 cup graham cracker crumbs
  • 0.25 cup unsalted butter, melted
  • 0.25 cup white sugar
  • 2 (8 ounce) packages cream cheese, softened
  • 0.75 teaspoon vanilla extract
  • 1 pint sour cream
  • 1 tablespoon graham cracker crumbs
Instructions:
  • Combine graham cracker crumbs, melted butter, and sugar in a bowl until well mixed. Press the mixture into a 10x14-inch glass pan to form the crust. Chill in the refrigerator for 30 minutes.
  • Preheat your oven to 350 degrees F (175 degrees C) for the perfect cooking temperature.
  • In a bowl, mix cream cheese and sugar for the cream cheese layer until smooth using an electric mixer. Add vanilla and eggs one at a time, and blend until smooth. Pour the mixture over the cooled crust.
  • Bake in the oven until the edges are puffed and the cheesecake surface is firm with a slight jiggle in the center when gently shaken, around 20 minutes. Cool on a wire rack for 20 minutes after removing from the oven.
  • Preheat the oven to 450 degrees F (230 degrees C).
  • In a bowl, use an electric mixer to blend sour cream, sugar, and vanilla until smooth. Pour the mixture over the cooled cheesecake.
  • Bake in the preheated oven for 10 minutes, then sprinkle the remaining graham cracker crumbs on top. Allow to cool at room temperature for 30 minutes, then refrigerate for at least 2 hours before serving.
  • Cut into elegant 1-inch squares before serving.
