Transport yourself to a sunny nostalgia with this refreshing Lemon Carrot Pineapple Jello Salad - a potluck crowd-pleaser!
Ingredients:
  • 2 3-ounce packages lemon flavored gelatin
  • 2 cups boiling water
  • 1 cup ice water
  • 1 9-ounce cans crushed pineapple with juice (cannot use fresh pineapple)
  • 1 teaspoon lemon juice or white vinegar
  • Pinch salt
  • 2 cups grated carrots
Instructions:
  • To prepare the gelatin, pour it into a small mixing bowl and add 2 cups of boiling water. Mix well until the gelatin is completely dissolved.
  • Combine 1 cup of ice water, canned crushed pineapple with juice, lemon juice (or vinegar), and a pinch of salt, ensuring to use canned pineapple as fresh pineapple will hinder the gelatin from setting.
  • Refrigerate until gelatin thickens, then fold in grated carrots until combined.
  • Transfer mixture to a jello mold and refrigerate until firm, for several hours. Briefly dip the bottom of the mold in hot water to unmold easily onto a serving platter. Gently shake to release and slice to serve. If you enjoyed the recipe, please consider rating and commenting below!
