Grandma's recipe Southern sweet potato pie with zesty orange and pineapple spices.
Ingredients:
  • 3 large sweet potatoes, peeled and diced
  • 0.5 orange, peel cut into thin strips
  • 1 pastry for a 9-inch pie crust
  • 2 eggs
  • 1 tablespoon pineapple juice
  • 1 tablespoon salted butter, melted
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground ginger
  • 1 pinch ground cloves
  • 1 cup white sugar
  • 1 cup heavy whipping cream
Instructions:
  • In a large pot, simmer sweet potatoes and orange peel in water until soft, about 10 minutes. Drain and cool; discard the orange peel.
  • Preheat the oven to a toasty 400 degrees F (200 degrees C), then elegantly line a 9-inch pie plate with the pie crust.
  • Mash the cooled sweet potatoes until smooth. Stir in eggs until fully incorporated. Incorporate pineapple juice, butter, and vanilla extract until well mixed. Add flour, cinnamon, nutmeg, ginger, cloves, and salt, then stir until combined. Dissolve sugar into the mixture. Whisk in heavy cream until smooth.
  • Transfer the sweet potato mixture into the prepared pie crust.
  • Transfer the pan to the preheated oven and bake for 40 to 50 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool on a cloth either on a table or window sill.
