Grandma's Swiss New Year's Bread (Zuepfe)

Experience a stunning and delicious Swiss New Year's bread recipe handed down from grandma.
Ingredients:
  • 3 (.25 ounce) packages active dry yeast
  • 3 cups warm water (110 degrees F/45 degrees C), divided
  • 1 pint heavy cream
  • 1 cup butter
  • 3 tablespoons salt
  • 8 cups all-purpose flour, or as needed
  • 1 egg, beaten
  • 1 tablespoon water
Instructions:
  • Combine yeast with 1 cup of water and let it rest.
  • In a saucepan, gently warm heavy cream over medium heat until it's almost scalding, about 3 to 4 minutes. Take off the heat and stir in the butter until melted. Then, add the remaining 2 cups of warm water followed by the eggs and salt, mixing until the butter is fully incorporated. Finally, pour in the yeast mixture and stir well.
  • Using an electric mixer, blend 4 cups of flour into the cream mixture until thoroughly combined, adding additional flour as necessary to achieve a very stiff dough.
  • Transfer the dough onto a generously floured surface. Incorporate approximately 4 additional cups of flour until the dough is silky, resilient, and no longer sticky. Place in a large greased bowl and allow it to double in size, which should take around 2 hours.
  • Gently press down the dough and allow it to rise again for approximately 30 minutes.
  • Shape dough into 6 long strands. Pair 2 strands together, overlap them to form an upside-down "U" shape, and braid them. Transfer onto an ungreased baking sheet. Mix beaten egg and 1 tablespoon water in a small bowl, then brush loaf with the wash. Allow to rise for an additional 20 minutes.
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Bake in the oven until beautifully golden, for about 30 to 40 minutes. Allow it to cool a bit before enjoying.
