Grandma's Thanksgiving Noodles

Elevate your Thanksgiving table with rich, hearty egg noodles in broth.
Ingredients:
  • 3 large eggs
  • 2 large egg yolks
  • 0.25 cup water
  • 1 teaspoon sea salt
  • 3 cups all-purpose flour, or more as needed
  • 2 (32 ounce) cartons chicken broth, or as needed
Instructions:
  • In a bowl, use an electric mixer to blend eggs, egg yolks, water, and salt. Gradually beat in 2 cups of flour. Stir in 1 cup of flour using a wooden spoon. Incorporate additional flour until the dough reaches a very thick consistency. Shape the dough into 4 equal balls.
  • Sprinkle flour over a pastry cloth, a rolling pin, and 4 sheets of waxed paper. Roll each ball of dough on the cloth until 1/8 to 1/4 inch thick. Allow dough to rest for 45 minutes. Gently flip each piece of dough and let it rest for an additional 45 minutes.
  • Layer the dough pieces and slice into noodles. Allow the noodles to air dry for approximately 3 hours.
  • In a large pot, bring chicken broth to a boil. Add noodles and simmer until tender and the broth thickens, about 15-20 minutes.
