Cheesy pasta salad with tangy dill pickles is a potluck favorite.
Ingredients:
  • 1 cup mayonnaise
  • 1 (8 ounce) package seashell pasta
  • 0.5 cup chopped deseeded dill pickles
  • 0.25 cup finely chopped red onion
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoon hot pepper sauce (such as Tabasco®)
  • 0.5 teaspoon dried dill, or to taste
  • kosher salt and ground black pepper to taste
  • 6 ounces diced Cheddar cheese
Instructions:
  • 1. Boil a large pot of salted water until bubbling. Cook the shells, stirring occasionally, for about 9 minutes, until they are tender but still slightly firm. Drain the shells, rinse them with cold water, drain again, and set aside.
  • In a spacious bowl, mix together mayonnaise, pickles, onion, lemon juice, mustard, hot sauce, dill weed, salt, and pepper. Gently fold in the cooled pasta and Cheddar cheese.
