Festive fruit cake loaves, aged for 2 weeks to soak up all the holiday flavors.
Ingredients:
  • 2 cups candied cherries
  • 1 cup raisins
  • 1 cup blanched almonds
  • 1 cup dried pineapple pieces
  • 3.5 cups all-purpose flour, divided
  • 2 cups white sugar
  • 1.5 cups butter
  • 6 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon almond extract
Instructions:
  • Preheat your oven to a toasty 300 degrees F (150 degrees C) and prepare two loaf pans by lining them with parchment paper.
  • Toss cherries, raisins, almonds, and pineapple in 1 cup of flour until evenly coated.
  • Cream together sugar, butter, and eggs until creamy. Sift the remaining flour with baking powder and salt, then add to the butter mixture. Stir in vanilla and almond extracts. Gently fold in the fruit and almond mixture. Spoon batter into prepared pans and spread evenly.
  • Bake the cake in a preheated oven until a toothpick inserted into the center comes out clean, for 1 1/2 to 2 hours. Afterwards, tightly wrap the cakes and let them age in a cool place for 2 to 4 weeks.
