Buttery crust topped with sweet, bubbling rhubarb filling - an irresistible twist on a classic grandma's crisp.
Ingredients:
  • 1 cup all-purpose flour
  • 5 tablespoons confectioners' sugar
  • 1.5 cups white sugar
  • 0.25 cup all-purpose flour
  • 0.75 teaspoon baking powder
  • 0.25 teaspoon ground nutmeg
  • 2 eggs, beaten
  • 3 cups chopped rhubarb
Instructions:
  • Preheat oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine 1 cup of flour and confectioners' sugar in a bowl. Use a pastry cutter or two forks to cut the butter into the mixture until it forms a crumbly texture. Press the mixture into an 8-inch square pan.
  • Bake the crust in the preheated oven until beautifully golden brown, about 15 to 20 minutes.
  • Combine white sugar, 1/4 cup flour, baking powder, and nutmeg with the beaten eggs. Gently incorporate rhubarb into the mixture, then pour the filling into the baked crust.
  • Bake in the oven until the filling is bubbly, about 35 minutes.
