Grandma's classic blueberry coffee cake recipe, a timeless favorite for over 60 years.
Ingredients:
  • 2 cups sifted all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.75 cup white sugar
  • 0.25 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 0.5 cup milk
  • 2 cups frozen blueberries
  • 1 tablespoon white sugar
  • 0.5 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 375°F (190°C) and grease a 9x9-inch cake pan with butter.
  • Combine the flour, baking powder, and salt by sifting them together, then set aside.
  • In a separate bowl, blend together sugar, butter, and vanilla until creamy. Then add the egg and beat until well combined.
  • Alternating between dry ingredients and milk, gently combine in 3 parts using a wooden spoon. Be careful not to overmix. Carefully fold in blueberries, then transfer the mixture into the cake pan and spread evenly with a spatula. Press gently with moistened fingertips if using frozen blueberries. Blend 1 tablespoon of sugar with cinnamon in a small bowl and sprinkle over the batter.
  • Bake in the oven until a toothpick comes out clean, around 40 minutes.
