Festive quick bread bursting with raisins and nuts, perfect for holiday gatherings.
Ingredients:
  • 1 cup hot, brewed coffee
  • 0.5 cup raisins
  • 0.5 cup shortening
  • 1 cup white sugar
  • 2 eggs
  • 2 tablespoons molasses
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground ginger
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup chopped walnuts
Instructions:
  • Allow the raisins to soak and plump up in coffee without draining.
  • Combine the shortening, sugar, and eggs until creamy. Mix in the molasses and vanilla.
  • Combine cinnamon, nutmeg, cloves, ginger, flour, baking soda, and salt in a large bowl, then create a well in the center.
  • Combine the liquid ingredients with the dry ingredients, then mix in the coffee, raisins, and nuts. Transfer the batter into a greased 9x5 inch loaf pan.
  • Cook in a perfectly heated 350°F (175°C) oven for 60 minutes.
