Ingredients:
  • 1 cup butter
  • 1.5 cups sugar
  • 2 eggs
  • 0.25 teaspoon lemon extract
  • 0.5 teaspoon vanilla extract
  • 3 cups flour
  • 2 cups oatmeal
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and give your baking sheets a gentle grease.
  • In a large bowl, mix the butter and sugar until creamy. Add the eggs, lemon extract, and vanilla extract. In another bowl, sift together the flour, salt, and baking soda. Gradually combine the flour mixture with the butter mixture while beating. Finally, fold in the oatmeal.
  • On a lightly-floured surface, roll the dough out to 1/8-inch thickness. Use cookie cutters to cut out shapes and place them on the prepared sheets.
  • Bake until edges are golden, for 10 to 12 minutes. Cool on a rack before frosting.
