Decadent almond-filled rolled pancakes with chocolate sauce are perfect for breakfast or dessert.
Ingredients:
  • 2 cups all-purpose flour
  • 2 eggs
  • 1 cup milk
  • 1 cup soda water
  • 0.5 cup vegetable oil
  • 1 pinch salt
  • 1 cup chopped almonds
  • 0.25 cup milk
  • 0.25 teaspoon vanilla extract
  • 1.5 teaspoons rum
  • 0.25 cup water
  • 0.5 cup chopped bittersweet chocolate
  • 2 tablespoons margarine
Instructions:
  • Mix the flour and eggs until smooth. Stir in the milk, soda water, vegetable oil, and salt until well combined. Refrigerate the batter overnight.
  • To prepare the pancakes, warm a lightly greased frying pan over medium heat. Stir the chilled batter thoroughly. Pour 1/4 cup of batter into the pan and cook for about a minute. Flip and cook for another minute until golden brown. Transfer the pancake to waxed paper. Repeat with the remaining batter, stacking the pancakes with waxed paper in between to keep them separate.
  • In a saucepan, mix chopped almonds, 1/2 cup sugar, milk, vanilla extract, and rum (optional). Stir over low heat until sugar is dissolved and mixture is creamy. Let it cool slightly before using as pancake filling.
  • Prepare the velvety chocolate topping by gently melting the chocolate, water, and 1/2 cup sugar in a saucepan over low heat. Once the chocolate melts, take the pan off the heat and swirl in the margarine until it melts and blends smoothly.
  • Generously spread almond filling onto each pancake, then roll them up and beautifully arrange on a platter. You will have 10 to 15 rolls, depending on their size. Drizzle the decadent chocolate topping over the rolled pancakes. For a delightful touch, warm the platter in the microwave for around 30 seconds just before serving.
