Enhance a tomato and cucumber salad with irresistible crumbled pepper bacon.
Ingredients:
  • 0.5 pound thick-sliced peppered bacon
  • 1 tablespoon bacon drippings
  • 1 cup mayonnaise
  • 3 large tomatoes, diced
  • 2 large cucumbers, diced
  • kosher salt to taste
  • freshly cracked five-peppercorn seasoning to taste
  • 0.25 teaspoon ground cumin
Instructions:
  • In a large deep skillet over medium-high heat, cook the bacon until evenly browned, about 10 minutes, turning occasionally. Place the cooked bacon on a paper towel-lined plate to drain. Once cooled, crumble the bacon into a large salad bowl. Reserve 1 tablespoon of bacon drippings and allow it to cool.
  • Combine bacon drippings and mayonnaise with crumbled bacon until well mixed. Add tomatoes and cucumbers, then season with kosher salt, five-peppercorn blend, and cumin. Refrigerate for at least 1 hour (preferably overnight) before serving.
