Generational crepe recipe, versatile toppings like maple syrup, jam, or fresh berries.
Ingredients:
  • 1 cup all-purpose flour
  • 1.5 cups milk
  • 3 large eggs
  • 0.5 teaspoon vanilla extract
  • 1 tablespoon avocado oil, divided, or as needed
  • 1 tablespoon unsalted butter, or to taste
  • 2 tablespoons maple syrup, or to taste
  • 1 tablespoon powdered sugar, or to taste
Instructions:
  • In a large bowl, gently sift together flour, sugar, and salt. Pour in milk, crack in eggs, and add vanilla. Whisk until the mixture is smooth and slightly thinner than typical pancake batter. Be careful not to overmix to avoid tough crepes.
  • Preheat a medium skillet over medium heat and drizzle 1 teaspoon of oil in the center.
  • Pour a 1/2 cup of batter into the center of the oiled skillet. Tilt the skillet to spread the batter evenly, ensuring the crepe is about 1/8-inch thick. Cook until the bottom is medium brown, top is dry, and edges start to curl, approximately 1 minute. Flip the crepe and cook until golden brown, about 30 seconds. If cooking takes longer than 2 minutes, adjust batter consistency or increase heat.
  • Lay the crepe on a plate, top with a dollop of butter, drizzle with maple syrup, roll it up, sprinkle with powdered sugar, and serve.
  • Continue to repeat the process, adding additional avocado oil to the skillet as necessary.
