Family recipe for moist eggless cakes made with secret ingredient applesauce. Popular at bake sales with loyal returning customers.
Ingredients:
  • 4 cups all-purpose flour
  • 2 cups white sugar
  • 0.25 cup unsweetened cocoa powder
  • 2 tablespoons cornstarch
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground cloves
  • 3 cups unsweetened applesauce
  • 0.75 cup vegetable oil
  • 1 cup raisins
  • 1 cup chopped pitted dates
  • 1 pound candied mixed fruit
  • 2 cups chopped walnuts
  • 0.5 cup walnut halves
  • 1 cup halved candied cherries
Instructions:
  • Preheat your oven to 300 degrees F (150 degrees C), then generously grease a 9-inch tube pan and a 9x5-inch loaf pan.
  • In a large bowl, combine sifted flour, sugar, cocoa, cornstarch, baking soda, salt, cinnamon, and cloves. Mix in applesauce and oil, then incorporate raisins, dates, mixed fruit, and 2 cups of walnuts. Fill prepared pans 3/4 full for mini pans or assorted pans.
  • Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center of the cake comes out clean.
  • Top the cake with elegant walnut halves and vibrant candied cherry halves for a stunning presentation.
