Grandma Maggio's Spaghetti Sauce

Authentic Italian tomato sauce infused with garlic, mushrooms, basil, and a touch of red wine from Grandma Maggio's secret recipe.
Ingredients:
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 whole head garlic, peeled and chopped
  • 2 cups sliced fresh mushrooms
  • 0.5 cup chopped fresh basil leaves, or to taste
  • 1 (28 ounce) can whole peeled tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 0.75 cup Merlot wine
  • 1 teaspoon ground black pepper
  • 2 teaspoons dried oregano
  • 0.25 cup white sugar
Instructions:
  • In a large saucepan over medium-low heat, gently sauté the onion and garlic in olive oil until translucent, about 6 to 7 minutes. Add mushrooms and basil, cook until mushrooms release their juices and basil wilts, around 10 minutes.
  • Add the whole peeled tomatoes and bring the mixture to a lively boil, using a spoon to break the tomatoes into pieces. Pour in the tomato sauce, stir to crush any remaining large tomato pieces, and bring to a gentle simmer. Cook the sauce until slightly thickened and bubbling, stirring occasionally, about 15 minutes.
  • Mix tomato paste into the sauce, then use the empty can to measure Merlot wine. Stir to dissolve any leftover tomato paste in the can and pour the wine into the sauce. Combine well, bring to a simmer, and stir in salt, pepper, dried oregano, and sugar. Simmer for 3 more minutes until the flavors meld and the sauce is heated through.
