"Upgrade your breakfast with great-grandma's cornmeal pancakes - quick and delicious!"
Ingredients:
  • 0.5 cup oil
  • 2 large eggs
  • 0.5 cup white sugar
  • 2 cups all-purpose flour
  • 1 cup cornmeal
  • 1 tablespoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup milk, or more as needed
  • 1 tablespoon vegetable oil
Instructions:
  • In a bowl, mix sugar, 1/2 cup oil, and eggs. Incorporate flour, cornmeal, baking powder, baking soda, and salt. Pour in 1/2 cup milk. Gradually add more milk, 1 tablespoon at a time, until reaching desired thickness.
  • In a large skillet, heat vegetable oil over medium-low heat. Spoon 1/4 cup of batter per pancake onto the skillet. Cook until bubbly on top and golden brown on the bottom, around 3 minutes. Flip and cook until golden brown, about 2-3 minutes more. Transfer to a plate and repeat with remaining batter to make more pancakes.
