Blarney Stones: pound cake cubes dipped in frosting and rolled in peanuts, a festive St. Patrick's Day delight.
Ingredients:
  • 2 cups confectioners' sugar
  • 0.5 cup milk, or as needed
  • 1.5 teaspoons vanilla extract
  • 2 cups dry roasted salted peanuts, finely chopped
  • 1 pound cake, cut into bize-size cubes
Instructions:
  • In a bowl, gently mix confectioners' sugar with milk until a smooth, thin frosting forms. Stir in vanilla extract for added flavor.
  • Put the chopped peanuts in a bowl and cover a flat surface or plate with waxed paper.
  • Coat each pound cake cube in luscious frosting, then roll them in crunchy peanuts before allowing them to set on wax paper. Repeat with the rest of the pound cake pieces.
