Quick and easy walnut brittle sweetened with honey, made in the microwave for speedy prep.
Ingredients:
  • 1 tablespoon unsalted butter, plus more for baking sheet
  • 1 cup chopped walnuts
  • 1 cup sugar
  • 0.5 cup honey
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 0.75 teaspoon baking soda
Instructions:
  • Coat a large baking sheet generously with butter.
  • Combine sugar and honey in a large microwave-safe glass bowl until thick. Microwave on high for 1 minute. Stir and microwave for another minute. Continue microwaving and stirring until mixture boils and sugar dissolves, for an additional 30 seconds to 2 minutes.
  • Add walnuts to the sugary mix and microwave for another 3 to 4 minutes. Mix in butter, salt, cinnamon, and vanilla extract. Microwave until the mixture turns a caramel color, approximately 1 to 2 minutes more.
  • Remove the bowl from the microwave and swiftly stir in the baking soda until well combined. Promptly pour the mixture onto the buttered cookie sheet. Let it cool until the brittle sets, approximately 15 minutes. Break into pieces and store in an airtight container.
