Classic comfort dish with a nostalgic touch; irresistible sauce elevates the flavors.
Ingredients:
  • 2 cups Sunsweet® Amaz!n™ Prunes, pitted
  • 2.5 cups all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground cloves
  • 2 cups granulated sugar
  • 3 eggs
  • 2 tablespoons butter
  • 1 cup Sunsweet® Amaz!n™ Prune Juice
  • 1 tablespoon baking soda
  • 1 cup granulated sugar
  • 1 tablespoon white corn syrup or honey
  • 0.5 cup whipping cream
  • 0.5 teaspoon baking soda
Instructions:
  • Preheat your oven to 350°F and prepare a 9x13-inch baking pan by lining it with parchment paper.
  • Place prunes in a saucepan and cover with water, then bring to a boil. Remove from heat and allow to steep for 10 minutes. Strain off any extra water and mash the prunes. In a bowl, combine flour, cinnamon, cloves, and nutmeg. In a separate bowl, beat sugar, eggs, and 2 tablespoons of butter until smooth. In a measuring cup, dissolve 1 tablespoon of baking soda in prune juice. Alternately mix the prune juice and flour mixture into the sugar and egg mixture. Fold in the mashed prunes and transfer the batter to a prepared baking pan.
  • Bake for 30 to 35 minutes or until a toothpick inserted into the center comes out clean. Allow to cool for 15 minutes, then remove from pan and let it cool completely on a rack. While cooling, start preparing the sauce.
  • Prepare the sauce by combining 1/2 cup of butter, sugar, syrup, cream, and 1/2 teaspoon of baking soda in a small saucepan over medium heat. Bring the mixture to a boil and let it boil for 2 minutes. Serve warm over a slice of cake.
