Baked peach custard on a cookie crust - irresistible and versatile. Enjoy warm with ice cream or chilled on its own, using canned peaches for a year-round treat.
Ingredients:
  • 2 cups all-purpose flour
  • 0.25 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 cup white sugar, divided
  • 0.5 cup butter
  • 6 fresh peaches - peeled, pitted and halved
  • 1 teaspoon ground cinnamon
  • 2 egg yolks
  • 1 cup heavy cream
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • In a large bowl, combine flour, baking powder, salt, and 2 tablespoons of sugar. Use your fingers to incorporate the butter until the mixture resembles coarse cornmeal. Press the mixture into a 9x13 inch baking dish. Arrange peach halves cut side up on top in a decorative pattern. Mix the remaining sugar and cinnamon, then sprinkle over the peaches.
  • After 15 minutes in the preheated oven, whisk together egg yolks and cream in a bowl and pour over the baked peaches.
  • Lower the oven to 350°F (175°C), then bake the dish for 30-40 minutes until it turns golden brown.
