Prune-filled yeasted breakfast pastries, a festive brunch favorite.
Ingredients:
  • 1 cup warm water
  • 1 teaspoon salt
  • 1 egg
  • 2 tablespoons butter, room temperature
  • 3 cups bread flour
  • 0.25 cup white sugar
  • 3 teaspoons bread machine yeast
  • 2 cups pitted prunes
  • 2 cups prune juice or water
  • 1 teaspoon ground cinnamon, or to taste
  • 0.5 teaspoon ground cloves, or to taste
  • 2 tablespoons lime juice
  • 1 cup white sugar
  • 0.5 cup all-purpose flour
  • 2 tablespoons butter, melted
  • 1 teaspoon cinnamon
Instructions:
  • In the pan of a bread machine, combine warm water, salt, egg, and 2 tablespoons of butter. Add bread flour to the mixture and gently pour 1/4 cup of sugar around the edges of the pan. Create a small well in the flour and add the yeast. Close the lid and select the DOUGH cycle on the machine.
  • As the dough mixes, simmer prunes, prune juice, 1/4 cup sugar, cinnamon, cloves, and lime juice in a saucepan until prunes are tender and the sauce thickens (about 15 minutes). Remove from heat and puree in a mixer or food processor until smooth.
  • Once the bread machine signals the end of the dough cycle, move the dough to a lightly floured surface and divide it into 20 small egg-sized pieces. Cover with greased plastic wrap and let it rest for 10 minutes.
  • Combine 1 cup sugar and 1/2 cup flour in a small bowl. Add melted butter and 1 teaspoon cinnamon, mix until crumbly for the streusel topping.
  • Preheat the oven to 350°F (175°C) and prepare a baking sheet by greasing it or lining it with parchment paper.
  • Form the kolache dough into balls and arrange on the baking sheet. Indent the center of each ball and fill with prune filling. Sprinkle streusel on top of each kolache. Allow the kolaches to rise until doubled in size, approximately 20 minutes.
  • Bake until the tops are golden brown, for about 14 to 16 minutes.
