Irresistible cake for dessert or a warm treat.
Ingredients:
  • 1 cup rolled oats
  • 1.25 cups boiling water
  • 0.5 cup butter
  • 2 eggs
  • 1.3329999446869 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 6 tablespoons melted butter
  • 1.5 cups packed brown sugar
  • 0.75 cup evaporated milk
  • 1.5 cups flaked coconut
  • 1.5 cups chopped walnuts
Instructions:
  • Soak oats in water until softened.
  • In a large mixing bowl, cream together 1/2 cup of butter or margarine with the sugars. Blend in the eggs. Sift together the flour, baking soda, salt, cinnamon, and nutmeg, then add to the sugar and egg mixture. Stir in the oats mixture and vanilla until well blended.
  • Transfer the batter into a 9 x 13 inch baking pan.
  • Place in a hot 350°F (175°C) oven and bake for 30 to 40 minutes.
  • Combine decadent melted butter, rich brown sugar, creamy evaporated milk, coconut, nuts, and fragrant vanilla to create a luscious icing.
  • Drizzle the coconut mixture over the warm cake.
  • Place the cake under the broiler and monitor carefully to prevent the nuts from burning, for approximately 5-10 minutes. Serve while hot or allow to cool before enjoying.
