Ingredients:
  • 1 cup sugar
  • 1 cup milk
  • 1 (15 ounce) can crushed pineapple, drained
  • 2 egg yolks
  • 3 tablespoons butter
  • 1 (9 inch) baked pie crust
Instructions:
  • Combine sugar, flour, and salt in a saucepan over medium heat, whisking until well blended. Stir in milk and cook, whisking constantly, until the mixture thickens and bubbles, about 3 to 5 minutes. Remove from heat.
  • Combine pineapple, egg yolks, and butter with the milk mixture, stirring until it starts to bubble. Cook over medium heat for 3 to 5 minutes. Stir constantly until hot and thick, for about 2 more minutes. Pour into pie crust and refrigerate for a minimum of 3 hours before serving.
