Grandma Tibbitts Sugar Cookies

Delicate and fluffy cookies from my great grandmother's recipe. Chill dough for 2 hours for perfect shape with a 3 inch cutter, or drop for quicker prep. Top with colored sugar for a charming finish or enjoy plain.
Ingredients:
  • 1 cup lard
  • 2 cups white sugar
  • 2 eggs
  • 1 cup buttermilk
  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 1 teaspoon salt
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and lightly grease the cookie sheets.
  • In a large bowl, cream together the lard and sugar until smooth. Add and beat in the eggs one at a time, then gently fold in the buttermilk. The mixture will be thin at this stage. In a separate bowl, mix the flour, baking soda, nutmeg, and salt together, then incorporate it into the buttermilk mixture using a wooden spoon. Be careful not to overwork the dough to avoid dense cookies. Spoon the dough onto the prepared cookie sheets. If making cut out cookies, refrigerate the dough for a couple of hours. Roll out to 1/2 inch thickness and dust your cookie cutter with flour between each cut.
  • Bake in the preheated oven for 8 to 10 minutes, then let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
